Joining ai Pazzi Pizza as part of the resort’s growing partnership with Fabio Viviani Hospitality, Pearls Oyster & Crudo Bar blends refined coastal cuisine with approachable counter service. The result is an elevated yet easygoing dining experience where the bold, briny spirit of the coast meets the indulgent energy of Las Vegas.

Known for its freshly shucked oysters, buttery lobster rolls, and signature seafood boils, Pearls Oyster & Crudo Bar celebrates comfort food done right. Guests can enjoy crisp calamari, towering chilled seafood platters, hearty po’ boys, and rich, creamy chowders made with premium ingredients, generous portions, and a dash of coastal charm.

Showcasing the Top Chef alum’s signature Italian flair, the menu reimagines the flavors of New Orleans with elevated, globally inspired touches. Highlights include Lobster Roll with Butter Brioche, Chilled Maine Lobster and Citrus Chive Aioli; Oysters Rockefeller with Proper Creamed Spinach and Parmesan Cheese; or Steamers featuring Littleneck Clams or Prince Edward Island Mussels with the choice of Garlic & White Wine Broth or Tomato Basil.

Kettle Signatures include Cioppino, a heart Tomato Stew with Rockfish, Littleneck Clams, Mussels, Shrimp and Calamari; New England Fisherman Stew with Clam Chowder, Fingerling Potatoes, Littleneck Clams, Potatoes, Prince Edward Island Mussels, and Rock Fish; Seafood Boil with Roasted Corn, Fingerling Potatoes, Crab Cluster, Littleneck Clams, Shrimp, Mussels, and Market Fish; and Shrimp Scampi with Fettucine, Cherry Tomatoes, Basil, and White Wine & Garlic Butter Sauce.

At the Crudo & Raw Bar, guests can explore fresh, artfully plated selections, including Ahi Tun & Scallop on the Half Shell served with Citrus Caper Vinaigrette, Burnt Orange, and Pickle Fresno; King Salmon with Castelvetrano Salsa Verde, and Crispy Capers; Bluefin Tuna with Marcona Almond Pistou, Crispy Pickled Onion, and Citrus Oil; and Oyster By the Half Dozen or Full Dozen with the choice of Classic or Yuzu Apple Mignonnette and served with Horseradish, or Calabria Chili and Cocktail Sauce.

The coastal inspiration extends to the cocktail and wine program, which showcases Italian influences, bright flavors, and fresh ingredients. The Pearls Oyster & Crudo Bar cocktail program includes Half Shell Spritz with Yuzu Syrup, Prosecco, and Soda Water; Honey Cove with Oolong Tea Infused Bourbon, Honey Syrup, and Angostura Bitters; Mother of Pearl Martini with Hendricks Gin, Dry Vermouth, Rice Wine Vinegar, Cucumber Syrup, and Orange Bitters; and Bend and Snap with Tequila, Ginger Syrup, Grapefruit Juice, and Soda Water.
