LAS VEGAS (Oct. 2, 2024 ) – JW Marriott Las Vegas Resort & Spa has appointed Eric Lhuillier as executive chef, leading the launch of a new fall-inspired menu at its premier restaurant, Hawthorn Grill.

As the new executive chef, Lhuillier will spearhead the overall management and daily operations of the Hawthorn Grill kitchen. Leveraging his culinary mastery and understanding of fine dining, he will design unforgettable dishes with bold flavors and exquisite presentation that delight Hawthorn Grill’s guests. Under his guidance, Lhuillier has added an in-house dry-aged beef program to Hawthorn’s menu, offering guests a new level of richness and sophistication in their dining experience.

Before joining Hawthorn Grill, Lhuillier was the executive chef at Peter Luger Steakhouse, and the executive chef at Wally’s Fine Wine and Gourmet at Resorts World in Las Vegas. Lhuillier has more than 34 years of experience in the culinary industry, including Michelin-starred restaurants and Relais & Châteaux in Paris, France. He completed an apprenticeship at La Cremaillère, a two-Michelin-starred restaurant in Orléans, France.

Hawthorn Grill has unveiled its new seasonal menu, showcasing the flavors of fall and winter. Standout selections from the new menu include:

Starters

  • Filet Mignon Tartare – hand cut filet mignon, butter lettuce, dijon mustard vinaigrette, french fries.
  • Roasted Bone Marrow – sweet and spicy honey shimeji mushroom, grilled baguette. 

Chilled seafood

  • Oysters in a Half Shell – red wine sherry mignonette, lemon.
  • Seafood Tower – chilled crab claws and legs, jumbo shrimp, shucked oysters, chilled lobster, lemon, mignonette, cocktail sauce.

Soup and salad

  • Onion Soup – sherry, sourdough, gruyere cheese.
  • Lobster Bisque – petit lobster salad, orange (poured table-side).
  • Caesar Salad – baby heart romaine, sourdough croutons, white anchovies, tomato, shaved parmesan cheese.
  • Wedge Salad – peppered nueske’s bacon, tomato, hard-boiled egg, blue cheese, crispy shallots, blue cheese dressing.

Steaks and chops

  • 24-ounce prime bone-in rib eye.
  • Rack of Lamb – spiced baby carrots, thyme jus.

Big cuts

  • 48-ounce Porterhouse.
  • 42-ounce Tomahawk.

House dry-aged

  • 16-ounce Prime Rib Eye.
  • 14-ounce Prime New York Strip.

Entrées

  • Dover Sole – caper lemon butter sauce, Syracuse potatoes, deboned tableside.
  • 14-ounce Lobster Tail – cold Canadian waters.
  • Portobello Steak – arugula salad, sauce vierge, crispy garlic (vegan).

Sides

  • Potato Mousseline – creamy, buttery.
  • Creamed Spinach – onion, garlic, cream, nutmeg.

Steak additions

  • Oscar Style.
  • Bone Marrow Brulee.
  • Red Chimichurri Sauce.
  • Horseradish Cream.

After-dinner cocktails

  • Sweet Caroline – Absolut pear, St. Germaine, pear puree, spiced sugar syrup, lemon.
  • Fade to Black – Ketel One Citron, Limoncello, blackberries, lemon juice.
  • S’more Please – RD1 bourbon, chocolate bitters, vanilla syrup, marshmallow.

Hawthorn Grill offers a richly appointed bar area, ideal for after-work or pre-dinner drinks. The spacious yet intimate dining room comfortably accommodates large family gatherings in the private dining rooms and romantic private booths for two. The expansive outdoor patio, featuring a vibrant waterfall amidst lush foliage, provides a serene al fresco dining setting.
